Sauvignon Blanc from New Zealand – Canterbury & Waipara

100% Sauvignon Blanc cool-fermented in stainless-steel to 13.5% alc. and 2 g/L rs, the wine undergoing batonnage over 6 weeks. Bright, very pale straw colour with slight green hues, pale on rim. The nose is softly voluminous with a harmonious amalgam of gooseberry, herb and nettle aromas that reveal tropical fruit elements in the glass. Dry to taste, bold and lively, up-front flavours of gooseberries and nettles are lifted by exotic tropical fruit nuances. The palate is underlined by racy and zesty acidity and well-handled phenolics that form a fine-textured and tight mouthfeel. The flavours are carried by the acid drive to an elegantly proportioned finish with good concentration and moderate length. Right, light straw yellow colour with slight green hues, lighter on rim. The nose is full, soft and broad with up-front aromas of gooseberries, nectarines and greengages harmoniously entwines forming a good core, revealing complexing smoky barrel-ferment nuances with aeration. Dry to taste, the palate features an array of green stonefruit flavours melded with nutty, spicy and smoky oak elements. This has good breadth, depth and weight and the mouthfeel is lively and mouthwatering with bright, racy and slippery acidity guiding the wine along a grainy-textured line. Herb and spice flavours unfold, lifting the dry-textured, acid-cutting finish. This is a weighty and complex oak-influenced Sauvignon Blanc with a racy mouthfeel and dry finish. Serve with salads and vegetables, and herb-marinated poultry and pork dishes over the next 2-3 years. Riesling is the specialty white variety for the Chapman family, the variety a proven performer in the region. Winemaker Belinda Gould had the fruit whole cluster pressed and fermented it with native yeasts to 12.5% alc. and 15 g/L rs. Straw yellow with a light golden hue to the colour, the bouquet is intensely rich and lush with honey and tropical fruits alongside lime notes as well as a little reduction. Off-dry to medium in sweetness level, the palate is still tightly bound and shy. However there is excellent depth of citrus fruits, honey and minerals, all on a soft, fine-textured palate. The palate is kept in excellent focus with fresh acidity, but the honied sweetness adds a touch of decadence to the depth. This has an intense bouquet with voluminous and ethereal aromas of yellow florals, ripe stonefruits and citrus and some honeysuckle elements that build with depth and presence. Medium-dry, rich, near succulent and lush flavours of citrus fruits, florals and honeysuckle form a soft, very fine-textured line and mouthfeel. Fresh acidity provides energy and drive, and the palate is harmonious and complete as it flows to a long and sustained dry finish featuring complex mineral and flint nuances. This has an elegantly proportioned, fine-featured and intense nose of limes and lemon, revealing complex layers of honey with secondary toasty elements in a smooth and integrated, harmonious array. Delicate mouthwatering mineral nuances add detail and thirst-quenching interest. Off-dry to taste and light-bodied, soft and delicate flavours of citrus fruits, white and yellow florals and honied toast are all harmoniously interwoven on the palate. This is smooth flowing with gentle acidity in the background enabling the palate and mouthfeel to grow in unctuousness. Fruit with botrytis infection from the ‘Terrace Edge' vineyard cropped at 1.8 t/a, WBP and indigenous yeast cool-fermented in stainless-steel to 12.0% alc. and 38 g/L rs. Bright, light golden-straw colour with some depth, pale on rim. This has a very full, layered nose of ethereal exotic florals with limes, honey, apricots and minerals, all expressed with purity. Medium in sweetness, this is a rich and luscious wine showing jasmine florals, honey and citrus fruit flavours forming an excellent, concentrated core with seamless, smooth textures. Fine acidity underlines the palate and balances the residual sugar well, and the wine has good tension and liveliness which leads to a long, densely packed finish that is dryer than expected. Medium-sweet and light-bodied, refined and intricate flavours of limes and exotic white florals are interwoven with honey and talc, along with fresh mineral elements. The palate is beautifully balanced and poised, the richness cut by the lacy acidity. Hand-picked fruit with 25% of the berries raisined by botrytis, indigenous yeast fermented to 11.0% alc. and 70 g/L rs. Bright, light golden-hued straw-yellow colour, pale on edge. The nose is softly full and gently voluminous with ripe lime fruit aromas harmoniously interwoven with layers of marmalade, raisins and honey, along with flinty minerality. Sweet to taste, gentle, but densely packed flavours of ripe limes, honey, exotic jasmine and apricots unfold in waves of richness. The mouthfeel is weighty, soft and rounded, with the acidity in the background. The flavours build to fill the palate and carry through to a very long and sustained finish showing some alcohol warmth and drive and complex wild honey and mineral notes. Made by Belinda Gould, the winemaker at Muddy Water winery, this was whole bunch pressed and fermented with native yeasts in seasoned oak to 14.0% alc., leaving 14.0 g/L rs. Batonnage was employed to add complexity. Light straw-yellow with golden hues to the colour, this has a voluminous, honied nose showing stonefruits and spices, almost late-harvest in style. Off-dry on palate, this has flavours of pineapple with tropical fruits and spiced pears. There is a firm tightness to the mouthfeel, showing good concentration and line. But the flavours are now beginning to become decadent with an opulence. A little alcohol warmth adds to the presence. Light straw-yellow colour with golden hues, this has a soft, full, rich bouquet of honey, stonefruits and spiced pears, along with complexing smoky nuances. There is excellent depth, volume and substance to the aromatics. With 15 g/L rs, this is medium-dryish to taste and is attractively luscious and honied, with ripe pear flavours that show lusciousness and succulence. Lovely unctuous textures have near perfect cut from the alcohol and acidity, these being in excellent harmony. This has a subtly rich and voluminous bouquet of spiced pears and yellow stonefruits, along with nuances of honey and minerals. The breadth of aromatics is a feature, and the nose reveals flinty lees work as well as hints of barrel. Medium-dry to taste, rich, weighty and deep fruit flavours of yellow stonefruits, honey and minerals form a deep core with great presence, and the fruit is enhanced by bright acidity. A little alcohol generosity and power adds to the drive through the palate. The mouthfeel is smooth and near unctuous, and carries through smoothly to a sustained finish. Off-dry to taste, rich, upfront and near opulent flavours of stonefruits, honey, spices and minerals fill the mouth with roundness and breadth. This is lush and generous, with subtle nutty oak elements adding to the layers of flavours. The palate blossoms with some alcohol drive, balanced by good acidity for tension, and the flavours flow to a long and sustained finish. Fresh acidity and supple, gentle tannins make this extremely accessible and approachable, allowing the distinctive fruit/oak expression to be the highlight. Made from Abel, 777, 667 115 and 5 clones, planted in 2002, the fruit totally destemmed, given a cold soak and native yeast fermented to 14.0% alc. The wine was then aged for 11 months in 25% new French oak barriques. Bright ruby-red with purple hues and a pale edge to the colour, this has a nose of vibrant, bright dark cherries and raspberry fruits, showing lovely purity and depth, all finely expressed. Medium weighted, the palate is fresh and lively with lifted dark berry and raspberry flavours and good concentration. Tannin extraction is moderate, and the mouthfeel is silky smooth. The tannins are fine and supple, and quite reserved, but build to softly carry the flavours to a finish with growing power, liveliness and length. Very full, deep, dark ruby-red colour with black-purple hues. The bouquet is full with densely packed aromas of dark red and black berry fruits along with subtle plum notes. Some floral, earth, mineral and savoury detail and complexity emerges in the glass. Medium-full bodied. Rich, ripe dark cherry and berry fruit flavours show with excellent depth and weight. Oaking is very sensitive. The flavours open and become mouthfilling, building in density and concentration. Sweet and succulent, the mouthfeel is fleshy and plump, but supported by a core of fine tannin and extract. Discreet acidity adds to the fulsome, rounded textures. The flavours lead to a moderately long finish with plum, liquorice and spicy flavours. This is a rich, succulent and fleshy Pinot Noir with ripe berry and plum flavours and good weight. Very dark, deep, purple-hued, ruby-red colour, youthful in appearance. This has an elegant and refined nose with tightly concentrated aromas of black cherries, berries and plums with lifted and fragrant violetty floral notes, spices, minerals and oak toast. Medium-full bodied, the fruit expression is a little restrained at present, but there is richness and sweetness, of black cherry and berry fruits entwined with black floral notes, minerals and nuances of oak char. The fruit and mouthfeel is enlivened by bright, lacy acidity, and supported by fine-grained tannins that grow in presence. The extraction carries the palate to a long, lingering, dry finish with nuances of violets and cherry fruit. This is a refined Pinot Noir with restrained, but vibrant black fruits and tannins that build in presence. It will develop over the next 5-6+ years. This has a softly concentrated nose of ripe, dark red berry fruits, still quite primary in expression, with raspberry liqueur notes and a suggestion of bacon-like oak toast. Rich, dark plum and liquorice nuances emerge with aeration. Medium-full bodied, bright, lusciously juicy and sweet flavours of dark red berry fruits are entwined with spicy plum elements. The fruit is stylishly restrained but vibrant with good freshness, and the flavours are framed by fine-grained tannin extraction. The wine flows with good presence, unveiling spicy oak, leading to a very long and sustained finish with fruit sweetness and soft textures. This is a bright, juicy, well-structured Pinot Noir with rich fruit and oak spicing. It will grow in richness and interest over the next 6-7 years. Made from fruit from 5-6 y.o. vines from two sites, one overlooking the Waipara river, the other a steep 45° north-facing slope. Indigenous yeast fermented to 12.5% alc. and aged 12 months in 25% new French barriques. Dark deep ruby-red colour with garnet hues, this has a dense and concentrated nose of savoury, spicy white pepper and dried herbs, laced with oak toastiness. There are reductive sulphide elements which integrate with breathing. Medium-weighted, this is an elegant, but densely packed wine showing depth of pepper, herb, oak and earthy complexities on a soft-textured but well-structured palate. Very dark, deep, near-saturated black-red with purple hues, this has a dense, full nose of spicy black fruits, game meat and toasty oak as well as complex nuances of dried herbs. Full bodied, this combines spicy, gamey black fruits, black pepper and toasty oak, along with a hint of reduction interest with fresh, juicy, mouthwatering acidity and soft tannin backbone. Nuances of dark florals and pepper emerge with time in the glass. Fruit from two small blocks, one on a terrace overlooking the Waipara River, the other on a steep slope, vines 6-7 years old, indigenous yeast fermented to 14.5% alc., the wine aged 14 months in 25% new French barriques. The nose is full, rounded and packed with aromas of black fruits, black pepper, ink and liquorice, along with layers of dark herbs, spices and minerals. A touch of reduction is well-integrated with the aromatic amalgam. Full-bodied, this has a rounded mouthfeel with supple tannin textures supporting the softly packed and concentrated flavours of savoury black berry fruits, earthy spices and black pepper. A touch of reduction adds a minerally, charry element. An underlying acid line provides good tension and balancing freshness, and carries the flavours along a fine-grained, but firm, dry finish. This is a full and softly textured, but concentrated Syrah with black fruit, pepper and earthy flavours. Match with slow-cooked game meat over the next 5-6+ years. 100% Syrah indigenous yeast fermented to 14.0% alc., the wine aged 11 months in French oak, approx. 25% new equivalence. Very dark, deep, black-hued, purple-red colour, youthful in appearance. The nose is very finely proportioned and tightly bound with mineral-infused, ripe black berry fruits and black pepper aromas, lifted by violetty perfumes and hints of Asian spices. Medium-full bodied, tightly concentrated black berry fruits, pepper and spice flavours form a dense palate core and line. The mouthfeel is very smooth, silky and near seamless, with very fine-grained tannins, and harmonious acidity. Aromatic floral notes and savoury black-earth elements unfold, and combine with mineral notes, providing a melange of flavours that blooms and carries through to a long, lingering finish. This is a tightly bound and youthful Syrah with a mineral and aromatic black fruits on a fine-textured palate. The bouquet is very fine, soft and elegant, with tightly bound, fragrant aromas of ripe black and red berry fruits intermingling with black pepper and violetty perfumes. Medium-bodied and elegantly proportioned, the flavours of black berried fruits, pepper and spices are lifted with dark red and violet floral notes. The palate is tight and softly concentrated, the fine-grained tannins providing a seamless, textured flow. The acidity is restrained, adding to the gentle mouthfeel, and the flavours lead to a moderately sustained finish with pepper and floral nuances.
