Trinity Hill – Refining the Hawke’s Bay Classics

John Hancock and Warren Gibson continue to refine the classical styles of Hawke's Bay wines that flow from the Trinity Hill winery. It's something I see clearly and have noted a number of times before. The Chardonnays, Bordeaux-varietals and Syrahs at every level get better every year through constant fine tuning. With Chardonnay, fruit is being sourced from cooler areas and sites, providing tighter styles. Greater elegance and more refined tannins have been sought after in these wines, and with Syrah the ideal degree of ripeness is being achieved, the wines not under-ripe nor over-ripe.
