Brilliant, straw-yellow with some depth and a slight green hue, lighter edged. The nose is soft, nuances of a freshly bitten Granny Smith apple melded with savoury elements, and Greek yoghurt creaminess, quite complex and savoury aromas focused. Medium-bodied, the palate is elegantly presented with soft aromas of pineapple, kiwi fruit, followed by prickly spices, salinity and minerals. The flavours are well proportioned with restrained intensity, show poise and elegance. Mouthwatering minerals and salinity underlined lacy acidity, linger with spices to a sustained, moreish finish. This is a well-crafted Sauvignon Blanc with focused savoury aromas, subtleties of tropical fruit and complexing spices and minerals, on a balanced, round, fine-textured palate. Match with pork loins and crab cakes over the next 3-4 years. 39% wild fermented, 20% fermented in older French oak to 13.4% alc, <1 g/l RS. Aged 9 months on lees, no protein-fining.
